2007 CABERNET SAUVIGNON Neal 3 Vineyard , Napa Valley


For our first cabernet sauvignon, we aimed to produce a new world style wine, but one that could be enjoyed and enhanced by food. This was important to us, since as we mentioned elsewhere, we are equally passionate about food, as we are about wine. With our wine maker, this juicy fruit forward cab was blended with just about 5% malbec, enough to give it a nice crisp edge that will better compliment a great meal. Dark, dry and tannic in its youth, this Cab is nowhere near ready to drink. It’s just too hard and the fruit is buried under all that astringency.
